The Fruit
Hand harvested at night and meticulously hand sorted and destemmed
The Juice
A pre-fermentation cold soak of four-days was used to increase color and density. Fermention was achieved using native yeast with low fermentation temperatures giving soft phenolics and fresh aromatics
The Wine
Racked to French oak barrels (30% new) to age for 14 months
