WINEMAKING
The Fruit
Hand-picked at night, then meticulously hand-sorted and destemmed
The Juice
Berries were gravity fed into small open-top fermenters. After a three-day soak, a long, cool fermentation was initiated using native yeasts. Gentle pumpovers were utilitzed to optimize extraction.
The Wine
Following fermentation, the wine was racked to French oak barrels for 16 months with minimal racking.
