WINEMAKING
The Fruit
Meticulous hand sorting, destemmed and fermented in small open-top fermenters. Five day pre-fermentation cold soak to increase color and density.
The Juice
Native and cultured yeasts with low fermentation giving soft phenolics and fresh aromaticsw over 10-14 days
The Wine
Racked to 35 percent new French oak barrels for 14 months
